Water is essential for life and health.  In this issue we will see why it is so important.  We'll also show you some great ways to purify your water for drinking, cooking, and showering.

Water is critical to digestion of our food.  Every step of the digestive process is dependent on a good supply of water. In the oral cavity, saliva is secreted by three glands as the food is chewed.  It is a good idea to chew your food over 20 times to crush it into a liquid.  Saliva is secreted by the parotid, submandibular, and sublingual glands to make the liquid that begins the digestive process in your mouth.  Amylase helps digest starches and mucin softens the food into a "bolus", or ball of lubricated food.  It is best not to drink liquids with your raw food since it could dilute the digestive juices and weaken their action.

The chewed food passes from the mouth into the larynx where the epiglottis directs it into the esophagus.  Not much digestion occurs in the esophagus.  The esophagus forces the bolus through the cardiac orifice and into the stomach where more digestion takes place. There  gastric acid and digestive enzymes break down protein. Pepsin and Intrinsic Factor are the juices that do most of the work here.

The food then exits the stomach by the pyloric sphincter and enters the small intestine, where most of the digestion takes place.  Bile from the gall bladder works to emulsify fats, while neutralizing the acid chyme from the stomach.  Pancreatic juices are made up of trypsinogen, chymotrypsinogen, lactase, carboxypeptidase, pancreatic lipase, and amylase.  These are alkaline enzymes which perform most of the digestion that takes place in the body.  Adequate hydration of the body is essential for proper function of these juices.  As the food breaks down into liquid nutrients, the villi and microvilli, finger-like projections in the intestinal wall absorb the nutrients and carry them into the blood.  The blood then carries the nutrients into the liver for filtering, removal of toxins and nutrient processing.

The remains of digested foods are passed into the large intestine where  excess water is removed and the feces are then passed out of the body.  There is estimated to be over 500 different kinds of bacteria in the colon, which act in a symbiotic manner to make healthy digestion possible.  The entire process of digestion is dependent on an adequate supply of water and digestive juices.
